1/2 Tsp Salt | 2 T Sugar |
2 1/4 C Flour | 1 Tsp Vanilla |
2 Eggs | Dash Nutmeg |
1/2 C Currants (Optional) |

My post for the carnival of recipies...
WELSH PANCAKES
· Soak and drain currants (optional)
· Soften yeast in a little warm water
· Heat milk to luke warm
· Mix together all ingredients
· Let rise in a warm place 30 - 40 minutes
· Fry as other pancakes
· Serve with maple syrup, jam, or sprinkle with sugar

I made these for Christmas breakfast this year, and WOW they were really easy and good! I halved the recipe which worked fine and 1 pkg. yeast is 2 1/2 tspn in case you didn't know - I buy in bulk. They were fluffy and light with just a touch of yeasty flavor. I HIGHLY recommend! But don't wait for a special occasion!
