Uncle Dave's Green Chili Stew

This is a family favorite!
  • 1 lb Ground Pork
  • 2 or 3 cloves of garlic chopped fine
  • 1 Qt Green Chili diced
  • 2 cans tomatoes (I use the whole tomatoes for this)
  • 3 or 4 russet potatoes Diced in 1 inch chunks
  • salt and pepper
  1. Brown the ground pork in a large stock pot (season with salt and pepper)
  2. Add the garlic and saute with pork
  3. Add the tomatoes squeezing them into the pot to break them up
  4. Add the chile
  5. Add the potatoes last and adjust the the liquid by adding water to cover them
  6. Simmer until potatoes are done and have begun to break down; adjust seasoning
  7. Serve with tortillas or saltine crackers
