This is a family favorite!
- 1 lb Ground Pork
- 2 or 3 cloves of garlic chopped fine
- 1 Qt Green Chili diced
- 2 cans tomatoes (I use the whole tomatoes for this)
- 3 or 4 russet potatoes Diced in 1 inch chunks
- salt and pepper
- Brown the ground pork in a large stock pot (season with salt and pepper)
- Add the garlic and saute with pork
- Add the tomatoes squeezing them into the pot to break them up
- Add the chile
- Add the potatoes last and adjust the the liquid by adding water to cover them
- Simmer until potatoes are done and have begun to break down; adjust seasoning
- Serve with tortillas or saltine crackers
I think this always tasts better after being reheated, plus I like to take any excess fat off the top after it has cooled overnight.
